Brews & Bakes: The Perfect Blend of Autumn Baking and Coffee

Its here!! My favorite time of year...fall baking season! And the end of September/beginning of October is a time of celebration because this is when we celebrate some pretty important National & International Holidays. Do you know what they are? National & International COFFEE DAYS! Yes, BAKING & COFFEE...a match made in seasonal heaven. I'm a little bit late on posting these this year, but that doesn't mean we can't better prepare for NEXT year! Mark these all-too-important holidays down in your calendar if you don't already have them:

National Coffee Day is September 29th (in the United States)

International Coffee Day is October 1



Both of these holidays are worth celebrating because what goes better with a freshly baked pastry or confection on a chilly, Autumn day than a freshly brewed cup of coffee? Read on to explore why the undeniably magical arrival of autumn sparks a unique passion for many of us: fall baking. And why there's no better way to embrace the magic of autumn than with the delightful combination of delicious baked goods and coffee. Be sure to read to the end where I share a recipe which combines both of these fabulous counterparts together in a dessert that recreates another fall-fan-favorite: PSL (Pumpkin Spice Latte) - Which, by the way, is celebrated on October 1st as well, on National Pumpkin Spice Day! Now...onto the recipe!


This is my take on LorAnn Oils recipe for Pumpkin Pie Blondies. I wanted to create a recipe that had the flavors of my favorite fall drink, the Pumpkin Spice Latte. I'm really happy with the results of this recipe and I think you'll like it too. These bars are versatile for non-coffee drinkers too because all of the coffee flavor is in the topping. If you're a coffee lover, like me, you can add some of the espresso powder to the bars too -- I did! - about 1 teaspoon.


This recipe also uses a favorite ingredient of my (which I happen to sell on my website, here). If you're unfamiliar with baking emulsions, here's some info:

I've really grown to love using baking emulsions rather than extracts. Baking emulsions are great because the flavors don't "bake out" like sometimes they do with extracts. This is because baking emulsions are water-based, unlike alcohol based extracts. Water doesn't evaporate as quickly as alcohol, which results in a more robust flavor in your baked goods. The best part is that you can easily swap any extract with a baking emulsion without using any more or any less! 1 teaspoon extract = 1 teaspoon baking emulsion
